I was cooking our vegan chickpea curry with a friend and we argued about spices the whole time. But when we sat down to eat, we realized we had something truly special on our hands. I’m pretty sure that there’s something on this list of vegan Asian recipes that will make you feel the way I did about that curry (and if not here, then definitely in our vegetarian asian recipes compilation). All this talk of curry might have you thinking of Asian dinner recipes, like cauliflower curry, peanut noodles, or vegan ramen, which you can certainly find below.
