About the recipe
Aloo Tikki also known as potato patties are basically North Indian snack of seasoned boiled potatoes shallow fried to golden brown and crisp. It is one of the of the most popular chaat item here in India. An extremely easy and less time consuming dish, which you can either make it plain or stuff it with your favorite filling. We north Indians, refer tikki as a tikiya also. Hence the name aalu ki tikiya! Also known as Aloo Patties, we usually enjoy these with green chutney, mint chutney and tamarind chutney or some ketchup. The other way of making north Indian potato tikki is by stuffing the patties with spicy chana dal or peas filling. You may find different recipes of tikkis on various sites on the net. It is because of variety of taste and preference. If you are on a road trip, often you pass through various dhabas and chai stalls where they serve these patties as a snacks along with beverages. Quickly now, let’s note down the ingredients and method for this lip smacking crispy aloo tikki recipe.
Ingredients
Ideally, aloo tikki needs very few basic ingredients. But, as there is no specific rules to add fixed ingredients. You can surely add whatever flavoring element you wish to. The primary ingredient is of course boiled potatoes. The other ingredients that goes in are rice flour, chopped coriander leaves, chopped mint leaves, grated ginger, amchoor powder, rock salt, red chili powder, green chilies and regular salt. You can a bit of garam masala as well as some chat masala for intense flavor, I have not added here. Some people also like to to add corn flour as a binding agent to the potato mix. But, I prefer to stick to rice flour only as a binder and to make the tikki crispy. As it is light and gives a perfect crispness and an authentic flavor to the very amazing patties. However, you can add cornflour instead of rice flour. TIP: Do not forget to cool the boiled potatoes completely before adding cornstarch to it. Or the tikki mixture will become too sticky to handle. You can also opt to add poha (flattened rice flakes) along with cornflour to the potato mixture.
How to make Aloo Tikki
Here, I have used Instant Pot to boil the potatoes. You can boil it in pressure cooker or microwave or pot or anything that suits you. First, to begin with, mash the potatoes in a bowl. Do not mash it too fine or too thick. Then, add all the ingredients in a bowl. Now, mix it well to form the tikki mixture. Now take small amount of mixture and shape it into tikki. And, then repeat the same for all the mixture. Once they are ready, refrigerate them for 10-15minutes. After 15 minutes, heat oil in a pan. Once the oil is hot, gently place the tikkis on the pan and fry them on medium heat. Now, flip and fry the tikki another side until golden brown and crisp. Finally, take them out and place it on absorbent paper and then repeat the same for all the patties. Serve these hot and crisp aloo patties with chutneys or ketchup.
How to make tikki in the Instant Pot?
You can easily make this crispy Aloo Tikki in Instant Pot Air fryer or Mealthy Pot from start to finish. Clean and wash the potatoes well. Place the steel insert in the IP and pour 2 cups of water into it. Place the trivet or steamer basket and add potatoes. Close and seal the lid and pressure cook on ‘High’ for 8-10 minutes (for medium to large potatoes). Let the pressure release naturally. Open the lid and check, knife should pass easily through the potatoes. Take it out, cool, peel and mash. Add all the remaining ingredients to make the tikki mixture. Shape the patties out of the mix. Place the Mealthy or IP fryer basket in the steel insert of the IP. Lightly brush the basket with oil. Also, brush the tikkis with little oil and place on the basket. Ensure, there’s enough room between the two tikkis for proper crisping and easy flipping. Set the Instant Pot air fryer lid or crisp lid over the pot. Air fry them at 200 degrees (400 F) for 8-10 minutes. Check, flip and again air fry for another 8- 10 minutes or until golden and crisp. You may crisp it for extra 3-4 minutes, if you wish to. Note : If you are using Mealthy crisp lid, then you need to plug the crisp lid and not the IP plug.
Homemade tikki vs store bought patties
Potatoes are already the king of vegetables. Be it boiled, steamed, roasted or cooked. We have luckily got a lot options for snacks, also because potatoes are obsession. There are N number of snacks we can make from potatoes. Not just loved by adults but extremely loved by kids. Especially there are wide options for boiled potato recipes. If we try a bit hard, we will get the result of our snack similar to that of the ones available in stores. Frozen McCain aloo tikki was the preference earlier by my kids as they loved it. But once I started making these tikkis at home, their preference also changed :). Mc Donald tikki burger is no doubt very delicious. But the homemade Aloo Tikki burger is no less than that. and I mean it! All in all homemade patties is the best. And you get your own blend of taste and flavor. Plus, we absolutely know well what goes in our food when we make it home. They are preservatives and chemical free, fresh, healthy and nutritious. Also do not completely compare your recipes to the readymade ones. As they have their own formulas, you have to be an exception in this world full of experiments, isn’t it? And yes, I am not at all asking you to not eat the readymade ones, limit them and try out your own innovations. Trust me, you will get happier with every step and succeeding recipes.
Serving Suggestions
First of all, you can simply enjoy these crisp potato patty with chutneys. Or, top the tikkis with dollop of yogurt, chutneys, chaat masala and sev to turn it into lip smacking alu tikki chaat. Slather the paratha with green chutneys, along with some onions and chaat masala to make alu tikki kathi roll or masala tikki frankie. Also, if you are getting late for packing lunch for kids or for yourself at work, do not worry at all. Simply just grab the bread or buns out, splash them with sauces and mayonnaise. Then, place the patty, layer it with lettuce, tomatoes and onion rings. And there you go, ready with blissful spicy aloo tikki burger or tikki sandwich. Or add the cheese slices along with the sauces and place these aloo patties to make sliders.
Storage and Freezing
You can store the leftover fried potato patty in the fridge up to 4 days. Ensure to place it in clean airtight box. You can also store the patty in the fridge upto 3 days and fry when you wish to serve them. There were many queries regarding if we can freeze the aloo tikkis. So, yes, you can freeze them well. Just lay them in even layer on a try and freeze for 2 hours. Then, gather and place them in either ziplock bag or freeze safe box and freeze. When you want to serve it, you need to thaw it completely first. And ensure frying them in hot oil. You can even deep fry them if you wish to.
