First time, when I thought to make pasta in IP, honestly, I was nervous. I was really not sure how will it work and if pasta will really come out al dente or not. But, making pasta in Instant Pot works so well. With handful of ingredients you can create awesome weeknight dinners or weekend brunch in just few minutes. Ingredients and Tips to make best chicken Alfredo Pasta
Pasta
I have used Penne pasta to make chicken Alfredo. But, you have freedom to use Fettuccine, Fusilli, Spaghetti, Farfalle or any pasta of your choice.
Chicken
I have tossed chicken breast chunks in this recipe. But, you can use whole chicken breast as well as chicken thighs here. If you are using whole breast or thighs, then sear it for minute from the sides in butter first. Take it out and then proceed with recipe. Add seared whole chicken breast the top of the pasta before pressure cooking it. After the cooking cycle is over, take out the breast and chunk it. Then, add it back to the cooked pasta followed by the cheese.
Seasonings
I always keep the flavorings simple to make chicken alfredo. But, you are free to use the seasonings as per your taste. I have used freshly grated garlic, salt and pepper, dried herbs such as oregano, basil and parsley. You can use garlic powder, onion powder and any of your favorite dried or fresh herbs here.
Chicken Broth
I have used chicken broth here. You can use either vegetable broth or even water.
For Alfredo Sauce
I love to use cream, cream cheese and lots of parmesan cheese to make this chicken alfredo pasta. Generally, Alfredo sauce for pasta is made by simmering the dairy ingredients until it thickens. But, we are making chicken alfredo in Instant Pot. So, it’s all about adding and simply mixing the ingredients. Moreover, as this is one pot pasta recipe, the starch present in pasta will thicken the sauce easily. SO, we really need not worry about cooking the sauce to thicken it. You can go on ahead with milk or half and half or a low fat cream instead of heavy cream. Further, you can skip cream cheese, if you wish to. But, as I love the flavor of cream cheese here in Alfredo sauce, I always add it without fail. Also, I love the sauces to just cling and coat pasta perfectly. I personally do not prefer too much liquid sauce flowing from all around the pasta. So the below mentioned measure of cream and cheese works perfect to me. If the sauce is too thick as per your liking, then consider adding extra cream or milk until silky. ¼ cup to ½ cup increase should work well. Remember to start with ¼ cup of cream or milk along with cheese after the pasta is pressure cooked.
Cooking Time for pasta in Instant Pot
Never ever cook pasta for too long time. This will lead to over cooked pasta making it clumpy and messy. So, whenever you are making pasta in Instant Pot, remember to do the following. Always, cook the pasta for half the time minus 1 minute for the time mentioned on pasta package. Say, if the package says 10 minutes, then set the timer to 4 minutes for Instant Pot. Your pasta will always turn perfect al dente even in the Instant Pot.

How to make One Pot Chicken Alfredo Pasta on stove top?
In a pan or pot, heat oil and butter together. Add grated or chopped garlic and fry for 30 seconds. Add chicken chunks and sauté or high heat for 2 minutes. Season with salt and pepper, 1 teaspoon of dried herbs of your choice and toss. Add 3 cups of chicken broth, 1 cup of cream and mix. Bring it to a boil. Add pasta and mix. Simmer on low heat for 9-10 minutes or until pasta is cooked to al dente. Stir occasionally. Add cream cheese, parmesan cheese and give a gentle stir. Cheese will melt through the sauce. Immediately take the pan off the heat. Garnish with chopped parsley and some more grated parmesan, serve immediately. NOTE : If you are using whole chicken breast then do the following. Start off with heating 1 tbsp butter and 1 tbsp olive oil in pan or pot. Add chicken breast, season with salt and pepper, sear on each side until golden and cooked. Take out the chicken and set it aside. Then proceed with the rest of the recipe. Finally, slice the seared chicken and toss it with the pasta. Garnish and serve immediately.
How to make chicken Alfredo pasta in Instant Pot - Step by Step
Switch on the IP, place the inner pot and press sauté button. Once the IP displays ‘hot’, heat butter and add olive oil together. (photo 1) Add chopped or grated garlic and sauté for 30 seconds or until aromatic. (photo 2) Then, add chicken chunks and sauté on high (more) for 1 minute. (photo 3) Add dried basil, oregano and parsley, season with salt and pepper and sauté for 30 seconds. (photo 4) Add chicken broth and cream, stir. (photo 5) Now, add penne pasta and press it down with a spatula into liquid. Do not worry if the liquid doesn’t cover the pasta fully. (photo 6) Cancel ‘Sauté’, put the IP lid and turn the pressure valve to sealing position. Press Manual or Pressure Cook to cook for 4 minutes on high. (photo 7 and 8) When the cooking cycle is complete and IP beeps, do the quick release turning the valve from sealing to venting position. Switch on the ‘Sauté mode. Stir in the cream cheese and parmesan. Cheese will melt through and sauce will thicken. It took only 30 seconds for me. (photo 9 and 10) Note: If the sauce is too thick for you, add some more cream or milk. Start with ¼ cup at a time until desired consistency of the sauce is reached. Immediately take the inner pot out. Dish out, garnish with some fresh parsley and some more grated parmesan.
