Why You Should Try This Salsa
Summer is in full swing, which leaves me wanting all the fruits and vegetables. This delicious fruit salsa combines juicy, sweet pineapple with spicy jalapeño, piquant red onions and peak season tomatoes for a crowd pleasing, salad-like salsa. This gluten free and vegan appetizer is perfect for bringing to your backyard barbecues and potlucks. While it is delicious served as a dip, it can also pull double duty as a fresh accompaniment to any of your favorite grilled meats or fish. So much better than store bought, my fresh pineapple salsa is sure to become a family favorite. It can stand at room temperature for several hours, making it a perfect packable back-to-school snack. It is also easily customizable, meaning you get to control the level of heat to make it just right for your family. Similar to my fruit salsa with, Strawberries, Peach and Mango, this salsa also just happens to be a super easy recipe, requiring just 15 minutes of your time to throw together. As an added bonus, there is no cooking involved, which means you get to keep your house nice and cool while the sun is blazing. Hooray!
Ingredients
This bright and beautiful fruit salsa requires just 8 easy-to-find ingredients. Here’s everything you’ll need:
Pineapple - If you’re in the midst of peak pineapple season (which runs from late March through July), you may be able to find whole pineapple on sale. You can also opt to use pre-cut pineapple to save time, though I don’t recommend using frozen for this fresh application.Tomato - Choose sweet, ripe and fragrant tomatoes of any color for the best tasting salsa. If tomatoes aren’t in season, I recommend opting for cherry tomatoes.Jalapeño - For a more mild salsa, remove the ribs and seeds prior to chopping. To increase the heat, add another pepper!Bell Pepper - Choose red, orange or yellow bell pepper for the best flavor.Red Onion - To make the flavor more mild, soak chopped onions in cool water for 5-10 minutes, then drain and pat dry before adding to the salsa.Lime Juice - Fresh is always best, if possible. To get the most juice from your limes, give them a firm roll on the countertop for 10-15 seconds prior to cutting in half.Cilantro - Don’t forget to use the tender stems, too! They have all the yummy flavor of the leaves and are perfectly tender when minced.Salt - Add to taste.
How to Make Pineapple Salsa
In a medium bowl, combine pineapple, onion, tomato, bell pepper, jalapeño, cilantro, lime sand salt. Stir well, check and adjust only if it requires seasoning with salt and/or lime juice. Let rest for 10 minutes. Serve pineapple salsa at room temperature or chilled, with chips or your favorite grilled meats. Enjoy!
