So, Hauke phoned his mom – and returned with her GO-TO everyday salad that she’s been serving for ages. Of course, all of our recipes have to pass rather stringent tests – no family favours! They have to be easy to make, they have to have a solid nutritional value, and they need to be made with ingredients most of us can get hold of easily. This carrot and apple salad is made from just four ingredients (spoiler: we also have a six ingredient breakfast book Breakfast in Six available now) and that’s just awesome. This recipe doesn’t need more either – the ingredients all do their part, and really complement each other. For the mathematicians out there, you’ll notice there are seven ingredients in this picture. That’s because we don’t count oil, salt and sugar as extra – we figure everyone has it at home and will keep themselves stocked on it for many other recipes Carrot and apple always go well together, and lemon fuses with a little sugar for a great sweet-sour combo. A dash of olive oil tastes great (and the healthy fats help the stored vitamins to unlock), and the crunchy walnuts on the top are the proverbial icing on the cake. The healthy proverbial cake.
Carrot and Apple Salad does what with fats?
Yep, that’s right. Beta carotene (found in high levels in carrots) is converted into vitamin A – which the body needs and loves. The conversion is enhanced when a little healthy fat is added – which is a great reason to add a little olive oil and a few nuts! Nobody should need a reason to eat apples – doctors all over the world are kept away by our favourite fruits – and the latest research is backing up what we knew all along. Apples rock. And as your granny probably told you (maybe it started with granny Smith?) – eat the skin! It’s worth it. Just give it a quick wash first.
